A classic family recipe with an added zing using our Vinofood Sparkling Strawberry Jam. Quick and easy to make using basic pantry ingredients which I am sure you will already have in the your cupboard.
Great recipe for kids to make or for a quick treat when friends drop in for coffee. We love them with our Sparkling Strawberry Jam but you can use the jam flavour you love the best. Or try our Boysenberry & Shiraz Jam or Orange, Ginger & Chardonnay Marmalade.
Sparkling Strawberry Jam Drops
- 120 grams butter (softened at room temperature)
- 1 cup castor sugar
- 1 tsp vanilla extract
- 2 each eggs
- 2½ cups self-raising flour
- ½ cup Vinofood sparkling strawberry jam

Pre-heat oven to 180° and line 2-3 baking trays with baking paper.

Beat the softened butter, sugar and vanilla together until pale and soft.

Add the eggs, one at a time until combined and fluffy.

Add the flour and mix to a soft dough.

Roll the mixture into balls (around 24-26). Place on prepared trays. The cookies will spread a little so give them room between each ball.

Use your thumb to press into the centre of each biscuit to make a well for the jam.

Add a little jam to each biscuit and bake for 12-15 minutes or until golden and cooked through.

Remove from oven and let them sit on the tray for 1-2 minutes. Transfer to a wire rack to cool completely.
