Buttermilk Chicken with Tomato & Riesling Relish
- 8 chicken drumsticks
- 1 1/4 cup buttermilk
- 2 large eggs
- 1 cup flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 Tbsp olive oil
- 2 Tbsp vegetable oil
- 1 jar Vinofood Tomato & Riesling Relish

In a large bowl, whisk together the buttermilk and eggs.

Add the drumsticks, toss to coat then set aside – for best results let the chicken marinade in buttermilk for 1-2 hours.

Combine flour, salt and pepper in a shallow dish.

Remove chicken from buttermilk and dip into flour, turning to coat all sides.

Heat oil in large pan and add chicken.

Cook chicken thoroughly, ensuring all sides are golden and crispy.

Take out of pan and paper towel off any excess oil.

Serve on a bed of cabbage or salad, and top with Vinofood Tomato & Riesling Relish.
