Our delicious and super easy Fig, Banana and Walnut Loaf is a great “throw together” breakfast or afternoon treat. You’ll find most of the ingredients for this yummy take on banana bread in your pantry. We’ve added our Vinofood Figs in Shiraz Syrup for extra texture and sweetness. Give it a go – it’s simple, it’s fast, and the results are amazing.
Fig, Banana and Walnut Loaf
- 4 each ripe bananas
- ½ cup extra virgin olive oil
- 3 each free range eggs
- 1 ¼ cups brown sugar
- 1 ½ cups self raising flour
- ¼ cup Vinofood Figs in Shiraz Syrup (coarsley chopped)
- ¼ cup syrup from figs jar
- ¼ cup walnuts (coarsley chopped)

Preheat oven to 180°. Line loaf tin with non-stick baking paper, set aside.

Place bananas in a large mixing bowl and mash with a fork. Add in oil, eggs, sugar and syrup and mix to combine.

Add in flour and mix until combined.

Fold in figs and walnuts into mixture.

Pour mixture into loaf tin and bake for 1 hour, 10 minutes, or until cooked when tested with a skewer.

Allow to stand for 10 minutes then turn onto a wire rack.

Serve warm with a generous slather of butter, or pour some Shiraz syrup over for a special treat.
