When all you have is some potatoes, onion and cheese, whip up these quick and easy rosti in no time and enjoy with a glass of Cabernet!
Smoked Cheddar Rosti
- 600 gm potatoes, peeled and grated
- 100 gm onion, peeled and grated
- 60 gm smoked cheddar cheese, grated
- 2 tbsp fresh dill, finely chopped
- 30 gm butter, melted
- 150 gm Vinofood onion, thyme & red wine jam

Pre-heat oven to 100 °C (to keep rosti warm while cooking).

Mix potato and onion together in a bowl, then squeeze out and discard as much liquid as possible.

Add cheese, dill, butter, salt and pepper to taste into bowl and mix together.

In a large non-stick frying pan heat 1-2 tbsp olive oil on a medium heat.

Divide mixture into 6 and spoon out 3 portions into the pan. Use a spatula to shape each portion into a flat shape, gently pushing down to flatten.

Once golden brown underneath flip and cook the other side.

Keep rosti warm in the oven whilst cooking the rest.

Serve with pan-fried chorizo, avocado and Vinofood Onion, Thyme & Red Wine Jam. Enjoy!
